Pomegranate Coconut Mousse:
- 3 tsp of agar agar powder
- 2 cups of unsweetened pomegranate Juice
- ½ tsp of vanilla extract (alcohol free)
- ¼ cup of raw honey
- 4 tbsp of unsweetened coconut flakes
- 2 cups of coconut milk
- ¾ c. of pomegranate arils
Use a bowl and put ¼ c of the pomegranate juice in it. Put the agar agar powder over it.
The remaining pomegranate should be combined with the honey and leave to boil.
The boiling mixture should be combined with the agar agar mixture you prepared previously. Mix them well.
Let it simmer for a while. After it’s done, leave it to cool down at room temperature.
The coconut milk and the vanilla extract should be added after it has been cooled. Leave it to rest in the fridge for 30 minutes.
After this period passes, blend the mixture or stir it well as it should start to become thick.
Sprinkle the coconut flakes and pomegranate arils on top.
